Thai Peanut Chicken

Very filling peanut chicken recipe served with noodles.

===== Ingredients =====
For Chicken:
-choice of noodles. Rice linguine work well, or any other thick noodle
-2 chicken breasts, cut into chunks
-1/3 large cabbage, shredded
-2 carrots, shredded or julienne
-green onions
-fresh cilantro
-2tbsp peanuts, chopped

For Sauce:
-1/4c peanut butter
-1/4c soy sauce (prefer tamari)
-3 cloves garlic, minced
-2tbsp honey
-1tbsp fresh ginger
-1tbsp rice vinegar
-1tsp sesame oil
-1tsp layu or any chili oil


===== Instructions =====
1. In a bowl, whisk together the sauce ingredients and set aside.
2. Cook noodles for 3-5 minutes just to hydrate.
3. Heat oil in a skillet and cook chicken until golden.
4. Add some more oil and add in cabbage, carrots, and green onions. It helps to cover at this stage to let the cabbage steam a bit. Cook until carrots start to soften.
5. Drain and add in the noodles. Add the sauce immediately and stir to combine.
6. When serving, garnish with chopped peanuts and cilantro.
