Coconut Cake
Possibly the best coconut cake.
===== Ingredients =====
360g cake flour
13g baking powder
2g salt
400g sugar
160g unsalted butter, room temp (1.5 sticks)
55g vegetable oil
300g coconut milk
2 large eggs, separated
1/2tsp vanilla
4 egg whites
1/8tsp cream of tartar
12oz cream cheese, room temp
160g unsalted butter, room temp (1.5 sticks)
590g powdered sugar
1.5c shredded coconut
===== Instructions =====
1. Preheat oven to 350F. Butter and add a round of parchment paper to 3 9" round cake pans.
2. Combine flour, baking powder, salt in bowl.
3. Combine sugar, butter, vegetable oil in stand mixer until creamy.
4. Add in 2 egg yolks until combined, mix in vanilla.
5. Add in 1/3 flour mixture, then half coconut milk, next 1/3 flour, rest of coconut milk, remained of flour.
6. Whip 6 egg whites with cream of tartar until stiff peaks. Mix into batter carefully.
7. Pour batter into 3 pans, bake 19-22 minutes.
8. While cake is baking, make frosting in stand mixer. Mix in a bit of leftover coconut milk for extra flavor.
9. Once cake is completely cooled, assemble and serve.
