Chicken a la Crema
This will make food for several days. Chicken in a rich tomato sauce with sour cream or creme fraiche.
===== Ingredients =====
-4.5lb whole chicken, quartered
-1 yellow onion, chopped
-2c sliced mushrooms
-salt
-1tbsp chili powder
-1/4tsp cayenne
-1tsp black pepper
-2tsp cumin
-1tsp dried oregano
-4 cloves garlic, minced
-1 poblano pepper, thinly sliced
-14.5oz diced tomatoes
-4c chicken broth
-bay leaf
-1.5c sour cream or creme fraiche
-fresh oregano
-chopped cilantro
===== Instructions =====
1. Brown chicken in dutch oven until dark on both sides and fat has rendered. Remove and place in bowl.
2. Add onion, mushrooms, and salt to pot. Cook until well browned. Add chili powder, cayenne, black pepper, cumin, dried oregano, galic, and poblano. Cook until poblano begins to soften.
3. Add tomatoes, broth, and bay leaf. Increase heat to high. Stir in 1 cup sour cream and the fresh oregano. Bring to a simmer, add chicken, reduce heat to low. Simmer about 1 hour and 15 minutes, until chicken is cooked.
4. Remove chicken into bowl and allow to cool. Continue to cook liquids on medium-high until reduced about half.
5. Remove chicken from bone and skin, break up into smaller pieces.
6. Reduce heat again, return chicken to sauce. Simmer another 15 minutes. Serve with cilantro and more sour cream. Adjust salt if needed.
