Cashew Chicken

===== Ingredients =====
Sauce:
16g dark soy
16g light soy
80ml water
11g chinkiang vinegar
21g rice vinegar
33g honey
9g cornstarch
pinch of white pepper
Chicken:
1 cup cashews
4-5 chicken thighs cut into 1" cubes
salt and pepper
4-5 green onions, cut into 1" pieces
4 cloves of garlic, rough chop
1" ginger, grated
1 rib celery, sliced
1 green bell pepper, 1/2" dice
1/2c water chestnuts, sliced
===== Instructions =====
1. Mix sauce ingredients
2. Cook chicken in wok 6-8 minutes until cooked, then remove.
3. Add oil back to wok, add onions, garlic, and ginger. Stir fry about 30 seconds.
4. Add celery, pepper, cashews, fry 30 seconds.
5. Add chicken and sauce, stir fry about a minute until sauce thickens.
6. Serve over rice.
