Butter Chicken
You're gonna need some spices.
===== Ingredients =====
Marinade:
-800g boneless chicken thighs, cut into bite-sized pieces
-1/2c plain yogurt
-3 cloves minced garlic
-2tsp garam masala
-1tsp turmeric
-1tsp ground cumin
-1tsp chili powder
-1tsp salt
Sauce:
-2tbsp olive oil
-2tbsp ghee
-1 onion, sliced
-3 cloves minced garlic
-1/2 inch grated ginger
-1.5tsp ground cumin
-1.5tsp garam masala
-1tsp ground coriander
-14oz (400g) crushed tomatoes
-chili powder to taste
-salt
-1c heavy cream
-1tbsp sugar
===== Instructions =====
1. Let chicken marinate for at least 30 minutes.
2. Heat oil, brown chicken but do not cook fully yet. Remove when browned.
3. Fry onions in same pan, add garlic and ginger. Add spices and cook for 20 seconds before adding tomatoes, chili powder and salt.
4. Let this mixture simmer for 10-15 minutes, then blend until smooth.
5. Pour sauce back into pan and add cream and sugar. Add chicken back to pan. Allow to cook for another 8-10 minutes.
6. Serve with basmati rice.
