Kung Pao Chicken

===== Ingredients =====
Marinade:
2.5 tbsp cornstarch
1 egg white
pinch of salt
pinch of pepper
1lb chicken thighs cut into bite-sized chunks
Stir-fry:
6 green onions cut into 1 inch pieces
8 garlic cloves, sliced
8 chilies, cut into 1/2" pieces
3/4 cup peanuts
1.5 tsp dark soy sauce
1.5 tbsp light soy sauce
2 tbsp shaoxing wine
60g sugar
2.5 tbsp hoisin
1 tsp msg
2 tbsp white vinegar
===== Instructions =====
1. Allow chicken to marinate for 30 minutes. Prepare other ingredients. Bring about 2 inches of oil in a dutch oven to 375F.
2. Add chicken in batches to oil and cook for about a minute, just to sear the outside.
3. In a wok, heat and add some oil. Cook chilies and green onion about a minute, then add peanuts and garlic and cook another minute. Add in chicken, soy sauces, and cook until sauce is absorbed. Deglaze with shaoxing, stir in sugar, hoisin, and msg. Toss to coat, then deglaze with vinegar. Toss and cook for another 30 seconds to a minute. Serve with rice.
