===== Ingredients =====
7g yeast
230g warm water
120g AP flour
16g olive oil
10g salt
285g AP flour
===== Instructions =====
1. Mix yeast, water, and flour in bowl. Allow to sit 10-15 minutes until starting to bubble.
2. Mix remaining ingredients, then mix with dough hook until soft dough forms. May be necessary to knead by hand.
3. Cover and allow dough to rise for about 2 hours, until doubled.
4. Divide into 8 balls, cover and rise for 30 minutes.
5. Flatten each ball into a pita shape with a rolling pin or tortilla press. Cook in cast iron skillet with oil until spots form on each side, about 1-2 minutes per side.
