Dry-Fried Chicken
Spicy Szechuan chicken dish.
===== Ingredients =====
-2 celery stalks
-1lb chicken breast, cut into chunks
-green onions
-oil
-8 dried red chiles
-1tsp szechuan peppercorns
-1.5tbsp doubanjiang
-1tbsp shaoxing wine
-1tsp soy sauce
-salt
-sesame oil
===== Instructions =====
1. Slice celery at steep angles, as well as the green onions.
2. Stir fry chicken in wok until it is fairly dry, using only oil.
3. Reduce heat, add chiles and peppercorns, stir fry a few seconds. At doubanjiang, cook 10 seconds. Add rice wine, soy sauce, and salt. Continue to cook together until chicken is dry and fragrant.
4. Add celery and green onions, stir fry a few minutes until just tender. Turn off heat, season with sesame oil and salt. Serve over rice.
