Challah
Classic Challah bread. Sweet and fluffy.
===== Ingredients =====
-482g Bread flour\\
-5g salt\\
-11g instant yeast\\
-2 eggs\\
-85g honey\\
-74g oil\\
-113g water\\
-1 egg for egg wash\\
===== Instructions =====
1. Mix dry then wet ingredients together, combine in stand mixer until a soft and smooth dough forms. Allow to rise, covered, for 2 hours. Dough will probably not double, but will be a bit puffy.\\
2. Gently deflate dough, transfer to greased work surface. Split into three equal balls and roll into 20" ropes.\\
3. Braid the ropes together and then transfer the loaf to a parchment-covered baking sheet. Cover in plastic wrap lightly and allow to rise for another 2 hours. Loaf will rise considerably.\\
4. Cover in egg wash and bake at 375F for 20-25 minutes, until sufficiently browned.\\
5. Remove after baking and allow to cool on a rack.
