Pumpkin Roll

Simple pumpkin roll recipe.

===== Ingredients =====
Cake:
-3/4c AP Flour
-1/2tsp baking powder
-1/2tsp baking soda
-2tsp pumpkin spice
-1/4tsp salt
-3 large eggs
-1tsp vanilla
-1c sugar
-2/3c pumpkin puree

Filling:
-8oz cream cheese, softened
-1c powdered sugar
-6tbsp unsalted butter, soft
-1tsp vanilla

===== Instructions =====
1. Mix dry and wet ingredients separately, then combine together.
2. Line a 10x15 jelly roll pan with parchment paper and pour in batter. Bake at 375F for 13-15 minutes.
3. When done baking, remove cake from pan with parchment paper and carefully roll while still hot. Allow to cool to room temperature while still rolled.
4. Make the filling while the cake cools.
5. After the cake has cooled, gently unroll it and spread the filling evenly. Carefully re-roll the cake and refrigerate one hour.
6. Sprinkle top of cake with powdered sugar before serving.
