Red Velvet Cake
This is a traditional red velvet cake, made without dye. The reddish color comes from a chemical reaction between the cocoa powder and vinegar.
===== Ingredients =====
-2.5c AP Flour
-2tbsp Dutch process cocoa powder (aka non-alkalized)
-1tsp baking soda
-1c buttermilk
-1tsp vanilla
-1.5c light brown sugar
-1.5c neutral oil
-1tsp salt
-2 large eggs
-1tsp vinegar
-1 recipe Ermine Frosting
===== Instructions =====
1. Grease 2 9" cake pans. Preheat oven to 350F.
2. Mix wet and dry separately, then combine.
3. Divide evenly, then back 40-45 minutes.
4. Allow cakes to cool in pans for 10 minutes, then release and allow to cool completely.
5. Top with ermine frosting.
