General Tso's Chicken

Recipe adapted from Made With Lau

===== Ingredients =====
-500g chicken thighs (about 4 thighs)
-ginger, minced
-2 cloves garlic
-1 tbsp laoganma chili crisp
-oil for frying

-2g salt
-1/2 egg (save other half for batter)
-10g cornstarch
-8g water

-30g flour
-10g cornstarch
-1/2 egg
-3.5g baking powder
-3-4 tbsp water
-a bit of olive oil

-32g light soy sauce
-18g dark soy sauce
-30g sugar
-20g rice vinegar
-8g tomato paste
-1g white pepper
-3.5g cornstarch
-30g water
-5g sesame oil

===== Instructions =====
1. Cut chicken into bite-size piece and then marinate in salt, egg, cornstarch, water mixture.
2. Make batter by combining flour, cornstarch, egg, baking powder, and water as needed until consistency of cold syrup. Add a bit of olive oil.
3. Heat oil for frying, about 1.5 to 2 inches deep. First frying around 300F, second frying at 375F.
4. Make sauce by combining both soy sauces, sugar, vinegar, tomato paste, and white pepper. Cornstarch, water, and oil can be added now if you want.
5. Dredge marinated chicken in batter and fry until chicken is just turning golden brown. First frying is to cook the meat. Set on a wire rack.
6. Raise oil temp to 375F for second frying. Fry chicken a second time, for 1-2 minutes until very crispy then transfer to wire rack.
7. Cook ginger, garlic, and chili crisp in wok with some oil for 30 seconds. Add in sauce mixture and cook for another 30 seconds to thicken. Add in chicken and toss to coat before serving over rice.
