English Muffins

Basic English Muffins, great for breakfast.

===== Ingredients =====
397g milk
3tbsp butter
4g salt
25g sugar
1egg
7.5g yeast
540g AP flour

===== Instructions =====
1. Combine all ingredient in stand mixer, mix with paddle attachment until dough is smooth and shiny and comes off the sides, about 5 minutes.
2. Rise 1-2 hours.
3. Divide into 16 balls, flatten by hand into small pucks. Sprinkle semolina flour into cast-iron pan.
4. Cook on low heat 7-15 min per side, until 200F on inside.
