Chocolate Mousse

Easy chocolate mousse recipe from Serious Eats.

===== Ingredients =====
-170g 60% chocolate\\
-80g whole milk\\
-1 large egg yolk\\
-4 large egg whites\\
-2tbsp sugar\\

===== Instructions =====
1. Chop the chocolate finely and melt it. Double boiler is fine, but microwave is much easier for this recipe.\\
2. Bring the milk to a boil then whisk it into the chocolate. Add the egg yolk and whisk that in too.\\
3. Beat egg whites in mixer until soft peaks. Increase speed and slowly add in sugar. Beat until just before stiff peaks, while the whites still have a glossy appearance.\\
4. Mix 1/3 of the meringue into the chocolate and whisk well. Gently fold in the rest.\\
5. Chill at least one hour before serving.
