Chef John Kabobs
Simple kabob recipe from Chef John
===== Ingredients =====
2tsp cumin
0.5tsp coriander
1.5tsp salt
cayenne
cinnamon
mace
fennel
yogurt
1lb lamb
2tbsp cold water
sauce:
1c greek yogurt
2 cloves garlic
2tbsp parsley
1tbsp lemon juice
water as needed
===== Instructions =====
1. Combine all spices. Mix 2/3 spices with lamb and reserve rest for later.
2. Roll meat into balls, skewer if desired. Mix sauce ingredients.
3. Sprinkle remaining spices on meatballs before grilling. Grill until cooked, about 10-12 minutes. Serve with yogurt sauce.
